They will close the track immediately if there is any snow around, because it is dangerous without snow, but much more dangerous with snow and no insurance company would ever pay for accidents at a snowy Nordschleife (there aren't many which will even pay for accidents at a dry warm Nordschleife...)
Those pictures of different cars on a snowy or icy Nordschleife are photo drives only and not possible for tourist drivers.
