Some of my favorites:

AMC Hornet AMX
AMC Spirit AMX 1980, 304 v8, RWD, talk about a hot hatch.
Mustang 5.0
Isuzu Impulse
Toyota Celica 1979

I was just thinking how much fun it would be to have a little car like this that would just be crazy fast and really small....

I'd have to go with anything that can have a V-8 crammed into it. You've hit most of the stockers, but with a conversion, the 240Z and Vega can run very fast.

LH/LX Torana small to medium size car came from the factory with the option of engines from an imported 1.9L 4 through 3.3L 6's to 5.0L AUSTRALIAN V8's and you can get them rego'd in most states in OZ with the US 454 big block

This is Gerry Marshall's Bertha, shown at Goodwood FoS in 2002, didn't they put a V8 in there?

IIRC Marshal raced in a Firenza - a Viva with a coupe roofline and a pointed snoot.

Ex F5000 Chevy V8 5litre or Chevy 358ci (5.5litre). Previous engine Holden Repco V8.
( so typical of race cars, the engine changed around as seasons )
495bhp on 4 weber 48IDAs - I'd have hated THAT balancing job :)

35 outright race wins.

Westfield Megabusa- under 1500lbs and has a 1300cc engine from the Suzuki Hayabusa motorcycle. Add a turbo and you can get 300 plus hp!!!!
