Nota's recipe for Kangaroo Tail Soup

1 Kangaroo Tail
2 litres Water
1 Stalk Celery
1 large Carrot
10 Peppercorns
1 large Onion
Cloves
30 grams Flour
30-60 grams Dripping
Salt
Tomato Sauce
1 5kg Rock

Wash, scald and dry the tail and divide the large joints at the root and shake in the flour. Heat the dripping and brown the pieces of tail.

Add 3 quarts of water and gently cook for 6 hours. Add the other ingredients and simmer for a further 10-12 hours, or until the rock is tender. Strain the stock into a large basin. Take out the pieces of tail and feed them to your attack-dog. You eat the rock

Usually there's a price-premium to be paid here as well for roo meat, except for kanga bangas (sausages) which are quite cheap and very tasty imo. Camel burgers are ok too. I've never tried Roast Echidna ..

If you don't mind the gamey aspect then roo steaks are good eating if, as mentioned, you take care not to dry them out when cooking

K-roo leather is outstanding, very thin and so soft but also the world's strongest hide for its weight. I've got boots, belt and my wallet made from roo, they are truly excellent. If you want top-quality roo shoes that last then have a gander at the Kangaroo Craftsman eg from RM Williams (one-piece upper construction!) they also do the other stuff

Thanks, I took a look at the recipes now I'm hungry. I think I'll leave the kangaroo meat in the store as it is, after all it is quite valuable. And frozen. But I will order it if I see it at a restaurant somewhere since I'm all for tasting dead animals that are new to me.
