Quick question - in a few of the pictures, the ones with the drivers, there are three people in racing suits, standing next to the cars - I am guessing they are the drivers, but I thought that teams generally employed two drivers per car for the most part?

Not at Le Mans. For big 24hr races you need three drivers to share the duties. If you check the entry lists you'll see that all teams have three drivers per car.

For the shorter races like most of the ALMS you could get away with just two drivers.
