That did not take into account the love that the Italian manufacturer's affluent customers still had for the Zonda. As a result, Pagani continued to build versions of the Zonda for several more years. The company also created a new '760' model, which could be specified as an upgrade of existing Zonda chassis for a one-off version.

What set the 760 apart from the earlier models was a further refined version of the Mercedes-Benz AMG built M297 engine. The naturally aspirated, 7.3-litre engine produced 760hp in this specification (hence the model name). While many enthusiasts praise the Zonda for its analog drivetrain, customers could also have the 760 fitted with the sequential, paddle-operated seven-speed gearbox of the Huayra.

As most of the Zonda 760s were based on existing chassis, new examples can be produced at any time. The most recent was the 'Oliver Roadster' introduced at the 2019 Pagani dinner. Among the customers of the 760 program is F1 driver Lewis Hamilton, who had the one-off 760 LH built, which was finished in purple with a distinct fin on the engine cover.

Late in 2019, the Aether Roadster, which had been built for a customer in 2017, sold for close to $7 million in the RM Sotheby's Abu Dhabi sale. That was a world record price for a Zonda sold auction.
