It depends on the car, so I chose wood in general.
On a luxury car like an S-Klasse or A8L, there's nothing like a nice wood trim.
On sports car, polished aluminum and carbon fibre (used appropriately) can look great.
I like metal, myself. I mean, the dash actually constructed of metal, not metal trim inserted into the dash. That feels solid and quality to me.

it really depends on the car. the wrong trim can make your car look "great for drifting"
coloured, chrome, bamboo and leather trim is also available...bamboo is only on Astons tho...
Wood because it is classy but it always depends on the car and its color
