The old TOCA series was good, but steadily got worse as it went on.
Forza 2 is by far the best in my opinion, I'd just like the extra cars and tracks GT4 provides and then the Gran Turismo series would be redundant.
For something a little more unrealistic, again the old Need for Speeds were great, but their ideas became more boring each year. A remake of Hot Pursuit 2 would be interesting...

NFS carbon was the last really good one of the series IMO. My favorite racing game is by far Forza 2, mainly because of the online support. It's a little dead now, but Forza 3 will bring it all back.

Personally, I prefer TDU and NFS Hot Pursuit for PC, FM2 and NFS:U2 for the Xbox.
Also, NFS: Most Wanted was a good one, play it on the PC every now and then. I haven't really liked the most recent Need for Speed titles, the last good ones were Underground 2 and Most Wanted
Pretty much anything on this list, but personally:
Forza Motorsport
Any of the MotorStorm games (it's hilarious the various slow-mo's when you crash/die)
and when I'm feeling in a mood, Mario Kart
Burnout Paradise still satisfies my need for speed on a regular basis

As far as impact of the era goes, I remember the F1 series for the NES in the early '90s blew me away, the background may have been nonexistent but the tracks were all there and the right shape. I also really like NFS Hot Pursuit from 2002 or thereabouts, it was one of the first PS2 games I owned to have Ferrari, Porsche and Lamborghini together.
Gran Turismo 4 or bust. Its the only reason I keep my PS2 still hooked up.
The car parking games are very useful because it also important to teach the rules of parking.Most of these parking games are free, which is good news for parents because they have to consider allocating a budget for them.
